Ingredients

  • 1 cup Libby’s Pumpkin
  • 3/4 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 cup confectioners’ sugar
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan. Line with parchment paper.
  2. In a large bowl, combine pumpkin, granulated sugar, cinnamon, ginger, nutmeg, and cloves. Mix well.
  3. Beat in eggs one at a time until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to pumpkin mixture, mixing until just combined.
  6. Stir in lemon juice.
  7. Pour batter evenly into the prepared pan.
  8. Bake for 13-15 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. While the cake is baking, lay a clean kitchen towel on your counter and dust it generously with confectioners’ sugar.
  10. Immediately after baking, invert the hot cake onto the prepared towel. Carefully peel off the parchment paper.
  11. Starting from one short end, tightly roll up the cake and towel together. Let cool completely on a wire rack.
  12. In a medium bowl, beat softened cream cheese and butter until smooth and creamy.
  13. Beat in confectioners’ sugar and vanilla extract until well combined and fluffy.
  14. Once the cake roll is completely cool, gently unroll it. Spread the cream cheese frosting evenly over the cake.
  15. Tightly re-roll the cake, this time without the towel.
  16. Wrap the cake roll tightly in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
