Description

A simple and delicious light and creamy cauliflower soup. It’s a healthy and satisfying meal perfect for any day.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium head cauliflower, cut into florets
  • 4 cups vegetable broth
  • 1/2 cup milk (low-fat or unsweetened almond milk)
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15-20 minutes.
  4. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  5. Stir in milk. Heat gently without boiling.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For a richer soup, you can use heavy cream instead of milk, but it will increase the calorie count.
