A simple and delicious light and creamy cauliflower soup. It’s a healthy and satisfying meal perfect for any day.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium head cauliflower, cut into florets
- 4 cups vegetable broth
- 1/2 cup milk (low-fat or unsweetened almond milk)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15-20 minutes.
- Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
- Stir in milk. Heat gently without boiling.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a richer soup, you can use heavy cream instead of milk, but it will increase the calorie count.
- Garnish with fresh parsley or chives if desired.
