Creamy and comforting soup with the flavors of a loaded baked potato.


Ingredients

  • Potatoes: 2 pounds, peeled and cubed
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • Chicken Broth: 6 cups
  • Heavy Cream: 1 cup
  • Butter: 2 tablespoons
  • All-purpose flour: 2 tablespoons
  • Cheddar Cheese: 1 cup, shredded
  • Bacon: 6 slices, cooked and crumbled
  • Chives: 2 tablespoons, chopped
  • Salt and Pepper: to taste


Instructions

  1. Melt butter in a pot.
  2. Sauté onion and garlic.
  3. Add potatoes and broth.
  4. Simmer until potatoes are tender.
  5. Whisk in flour.
  6. Stir in cream and cheese.
  7. Season with salt and pepper.
  8. Garnish with bacon and chives.
