A creamy and comforting loaded potato soup made easily on the stovetop. This recipe is packed with flavor and simple to prepare.


Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Optional toppings: sour cream, chives, extra cheese, extra bacon


Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in flour and cook for 1 minute, stirring constantly, to form a roux.
  5. Gradually whisk in the chicken or vegetable broth until smooth.
  6. Add the diced potatoes to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  7. Carefully transfer about half of the soup to a blender or use an immersion blender to blend until smooth. Return the blended soup to the pot.
  8. Stir in the milk and heavy cream. Heat gently, but do not boil.
  9. Stir in the shredded cheddar cheese until melted and the soup is creamy.
  10. Season with salt and black pepper to taste.
  11. Ladle the soup into bowls.
  12. Garnish with crumbled bacon, chives, and any other desired toppings.

Notes

  • For a thicker soup, use less broth or add more potatoes.
  • You can use any type of potato you prefer, such as Yukon Gold or Russet.
