Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 4 cups chicken broth
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chicken breasts and cook until browned (5-6 minutes per side). Remove and shred.
  3. In the same pot, sauté garlic and sun-dried tomatoes for 1 minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in heavy cream, Parmesan, basil, oregano, and red pepper flakes.
  6. Add shredded chicken back to the pot. Simmer for 10 minutes.
  7. Season with salt and pepper. Serve hot.
