Ingredients

- Red onion (1/4, thinly sliced)
- Feta cheese (2 tbsp)
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, lemon zest, and minced garlic.
- Heat olive oil in a pan. Cook chicken until done.
- Let chicken cool, then dice.
- Whisk together lemon juice, olive oil, and chopped dill.
- Combine quinoa, cucumber, tomatoes, and red onion.
- Add chicken and dressing to the quinoa mixture.
- Top with feta cheese.
