Ingredients

  • Chicken breasts (2)
  • Lemon (1)

  • Garlic (2 cloves)
  • Cooked quinoa (1 cup)
  • Cucumber (1/2, diced)
  • Cherry tomatoes (1/2 cup, halved)
  • Red onion (1/4, thinly sliced)
  • Feta cheese (2 tbsp)
  • Salt and pepper to taste


Instructions

  1. Season chicken with salt, pepper, lemon zest, and minced garlic.
  2. Heat olive oil in a pan. Cook chicken until done.
  3. Let chicken cool, then dice.
  4. Whisk together lemon juice, olive oil, and chopped dill.
  5. Combine quinoa, cucumber, tomatoes, and red onion.
  6. Add chicken and dressing to the quinoa mixture.
  7. Top with feta cheese.
