Ingredients

  • 1 pound cooked chicken, shredded
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped onion
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional: Tortilla chips for topping


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, black beans, diced tomatoes and green chilies, cream of chicken soup, shredded cheddar cheese, sour cream, chopped onion, chili powder, and cumin.
  3. Season with salt and pepper to your preference.
  4. Mix all ingredients until well combined.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 20-25 minutes, or until heated through and bubbly.
  7. If desired, top with crushed tortilla chips before serving.

Notes

  • For a spicier casserole, use a can of diced tomatoes and green chilies that is labeled ‘hot’.
  • You can substitute rotisserie chicken for the cooked chicken to save time.
