Description
A refreshing pasta salad featuring the flavors of Mexican street corn.
Ingredients
- Pasta (1 pound)
- Corn (4 cups, cooked)
- Red onion (1/2, diced)
- Cilantro (1/4 cup, chopped)
- Cotija cheese (1/2 cup, crumbled)
- Mayonnaise (1/2 cup)
- Lime juice (2 tablespoons)
- Chili powder (1 teaspoon)
- Garlic powder (1/2 teaspoon)
- Salt and pepper (to taste)
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, corn, red onion, and cilantro.
- In a small bowl, whisk together mayonnaise, lime juice, chili powder, and garlic powder. Season with salt and pepper.
- Pour dressing over pasta mixture and toss to combine.
- Gently fold in Cotija cheese.
- Refrigerate for at least 30 minutes before serving.

- You can grill the corn for added flavor.
