Description

A refreshing pasta salad featuring the flavors of Mexican street corn.


Ingredients

  • Pasta (1 pound)
  • Corn (4 cups, cooked)
  • Red onion (1/2, diced)
  • Cilantro (1/4 cup, chopped)
  • Cotija cheese (1/2 cup, crumbled)
  • Mayonnaise (1/2 cup)
  • Lime juice (2 tablespoons)
  • Chili powder (1 teaspoon)
  • Garlic powder (1/2 teaspoon)
  • Salt and pepper (to taste)


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, corn, red onion, and cilantro.
  3. In a small bowl, whisk together mayonnaise, lime juice, chili powder, and garlic powder. Season with salt and pepper.
  4. Pour dressing over pasta mixture and toss to combine.
  5. Gently fold in Cotija cheese.
  6. Refrigerate for at least 30 minutes before serving.
