These mini Greek yogurt pancake muffins are a fun and healthy breakfast option for kids. They are easy to make and perfect for busy mornings.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup Greek yogurt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Optional toppings: berries, syrup
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine Greek yogurt, milk, egg, and melted butter.
- Add wet ingredients to dry ingredients and mix until just combined.
- Fill muffin cups about 2/3 full.
- Bake for 12-15 minutes, or until golden brown.
- Let cool slightly before serving. Top with desired toppings.
Notes
- You can add chocolate chips or other mix-ins.
