Ingredients

  • 1 package refrigerated pie crusts
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • Whipped cream, for serving (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Unroll pie crusts and cut out circles using a cookie cutter or a glass.
  3. Press circles into mini muffin tins.
  4. In a bowl, whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and cinnamon.
  5. Pour pumpkin mixture into the pie crusts.
  6. Bake for 20-25 minutes, or until the filling is set.
