Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Ranch dressing mix
  • Cream of chicken soup
  • Pepperoncini peppers


Instructions

  • Rinse the chicken breasts or thighs under cold water and pat them dry with paper towels. Season the chicken lightly with salt and pepper.
  • Place the seasoned chicken in the bottom of your crockpot. In a separate bowl, whisk together the ranch dressing mix, cream of chicken soup, and the juice from the pepperoncini jar. Pour this mixture over the chicken, making sure to evenly coat the meat.
  • Scatter the pepperoncini peppers over the top of the chicken and sauce, distributing them evenly throughout the dish.
  • Cover the crockpot and cook the Mississippi Chicken on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
  • Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the sauce and stir to combine.
