Ingredients

  • 1 1/4 cups mashed overripe bananas (about 3 medium bananas)
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt


Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
  • In a medium bowl, use a fork or potato masher to mash the overripe bananas until they’re smooth and creamy. You should have about 1 1/4 cups of mashed banana.
  • In a large bowl, whisk together the mashed bananas, sour cream, vegetable oil, and eggs until well combined.
  • In a separate bowl, whisk together the all-purpose flour, brown sugar, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • Gently pour the banana bread batter into the greased loaf pan, smoothing the top with a spatula.
