A moist and flavorful bread combining pumpkin and zucchini for a delicious treat.
Ingredients
- 1 cup pumpkin puree
- 1 cup grated zucchini
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix pumpkin puree, grated zucchini, sugar, oil, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Squeeze excess moisture from zucchini before adding.
- Store in an airtight container for up to 3 days.
- Freeze slices for longer storage.
