A delicious and easy-to-make moist strawberry loaf cake, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mashed fresh strawberries
- 1/2 cup buttermilk
- Fresh strawberries and berries for topping
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- In a small bowl, combine mashed strawberries and buttermilk.
- Gradually add the dry ingredients to the wet ingredients, alternating with the strawberry mixture, beginning and ending with the dry ingredients.
- Pour batter into prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
- Top with fresh strawberries and berries.
Notes
- For a richer flavor, use brown sugar instead of granulated sugar.
- You can add a simple glaze on top.
- Store leftover cake in an airtight container.
