Description

A delicious and easy-to-make moist strawberry loaf cake, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed fresh strawberries
  • 1/2 cup buttermilk
  • Fresh strawberries and berries for topping


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. In a small bowl, combine mashed strawberries and buttermilk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the strawberry mixture, beginning and ending with the dry ingredients.
  7. Pour batter into prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Top with fresh strawberries and berries.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
