Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat the brown sugar and oil (or melted butter) until well combined. Then, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the pumpkin puree to the wet ingredients and mix until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
