Instructions
- Prepare the Crust: Start by crushing the Oreo cookies, including the filling, into fine crumbs. Mix the Oreo crumbs with melted butter until well combined, then press the mixture into the bottom of a springform pan, creating an even layer. Refrigerate the crust while you prepare the filling.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese with a hand mixer or a stand mixer until it’s light and fluffy. Gradually add in the powdered sugar, mixing until the mixture is smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the air pockets. Fold in a handful of crushed Oreo cookies, reserving some for the topping.
- Assemble and Chill: Spread the cheesecake filling evenly over the prepared Oreo crust. Smooth the top with a spatula.
