Description

Easy one-pan cheesy ground beef enchiladas with minimal cleanup.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (4 oz) diced green chilies
  • 1/2 cup sour cream
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F.
  2. Cook ground beef in a large skillet over medium heat until browned. Drain excess fat.
  3. Add onion and garlic, cooking until softened.
  4. Stir in taco seasoning and diced green chilies.
  5. Pour half the enchilada sauce into the skillet, mixing well.
  6. Spoon beef mixture into tortillas, roll up, and place seam-side down in the skillet.
  7. Top with remaining enchilada sauce and shredded cheese.
  8. Bake for 15-20 minutes until cheese melts.
  9. Garnish with sour cream and cilantro before serving.
