A delicious and healthy orzo dinner recipe.
Ingredients
- 1 cup orzo pasta
- 1 pound Italian sausage
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
Instructions
- Cook orzo according to package directions.
- Brown sausage in a pan. Remove and set aside.
- Sauté bell pepper, zucchini, and red onion.
- Add garlic and cook briefly.
- Pour in chicken broth and bring to a simmer.
- Add cooked orzo and sausage.
- Season with salt and pepper.
- Stir in Parmesan cheese.
- Serve hot.

- You can substitute sausage with chicken or turkey.
