- Italian sausage

Instructions
- In a large pot or Dutch oven, cook the Italian sausage over medium-high heat, breaking it up with a wooden spoon as it cooks, until it’s browned and cooked through, about 5-7 minutes. Transfer the cooked sausage to a plate and set aside.
- In the same pot, add a drizzle of olive oil and the chopped onions, carrots, and celery. Sauté the vegetables over medium heat until they’re soft and fragrant, about 5-7 minutes.
- Add the minced garlic to the pot and cook for an additional 1-2 minutes, or until the garlic is fragrant. Then, stir in the dried oregano, salt, and pepper.
- Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and add the ditalini pasta. Simmer the soup, stirring occasionally, until the pasta is tender, about 10-12 minutes.
- Return the cooked Italian sausage to the pot and stir to combine. Then, add the grated Parmesan cheese and stir until it’s melted and fully incorporated into the soup.
- Taste and adjust the seasoning as needed, adding more salt, pepper, or Parmesan to suit your preferences.
