Description

A simple and fresh pasta dish filled with seasonal vegetables.


Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Fresh basil, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions.
  2. Heat olive oil in a large pan.
  3. Sauté onion and garlic until softened.
  4. Add bell peppers, broccoli, and zucchini. Cook until tender-crisp.
  5. Stir in cherry tomatoes and vegetable broth.
  6. Season with salt and pepper.
  7. Add cooked pasta to the vegetables. Toss to combine.
  8. Garnish with fresh basil.
