A simple and fresh pasta dish filled with seasonal vegetables.
Ingredients
- 1 pound pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup vegetable broth
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Cook pasta according to package directions.
- Heat olive oil in a large pan.
- Sauté onion and garlic until softened.
- Add bell peppers, broccoli, and zucchini. Cook until tender-crisp.
- Stir in cherry tomatoes and vegetable broth.
- Season with salt and pepper.
- Add cooked pasta to the vegetables. Toss to combine.
- Garnish with fresh basil.
Notes
- You can add other vegetables you like.
- Feel free to add protein like grilled chicken.
