Patriotic Cheesecake Bars are rich, festive, and perfect for July 4th! Bake these creamy red, white, and blue treats to wow your guests!
Ingredients
- 24 ounces (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- 1 cup (150g) fresh strawberries, diced
- 1 cup (150g) fresh blueberries
- 1 cup (150g) fresh blackberries
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9×13-inch baking pan with butter or non-stick cooking spray, and line it with parchment paper, leaving some overhang on the sides.
- In a food processor, pulse the graham crackers until they’re finely crushed. Add melted butter and pulse until the mixture resembles wet sand. Press the mixture firmly into the prepared baking pan, creating an even layer. Bake for 8-10 minutes, then allow it to cool completely.
- In a large bowl, beat the cream cheese with a hand mixer until it’s light and fluffy. Gradually add the sugar, mixing well after each addition. Then, add the eggs one at a time, beating well after each addition. Finally, stir in the vanilla extract until it’s well combined.
- Divide the cheesecake batter evenly into three separate bowls. In one bowl, fold in the diced strawberries to create the red layer. In the second bowl, gently fold in the blueberries to create the blue layer. Leave the third bowl as the plain white layer.
- Carefully spoon the red, white, and blue batter layers into the prepared pan, spreading each layer evenly. Bake for 35-40 minutes, or until the center is almost set. Allow the bars to cool completely, then refrigerate for at least 4 hours or overnight before serving.
- Once chilled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve with a fresh dusting of powdered sugar or a dollop of whipped cream, if desired.
