Delicious pumpkin bars topped with a rich cream cheese frosting, perfect for any fall gathering.
Ingredients
- 15 oz pumpkin puree
- 3/4 cup vegetable oil
- 3 eggs
- 1 1/2 cups granulated sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- For the Frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together pumpkin puree, vegetable oil, eggs, and granulated sugar until well combined.
- In a separate medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan.
- While the bars are cooling, prepare the frosting. In a medium bowl, beat together softened cream cheese, softened butter, and vanilla extract until smooth and creamy.
- Gradually add the powdered sugar, beating until the frosting is light and fluffy.
- Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
- Cut into bars and serve.
Notes
- Ensure pumpkin puree is not pumpkin pie filling.
- For a jelly roll pan, adjust baking time.
- Store leftover bars in an airtight container in the refrigerator.
