Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon light corn syrup
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line an 8ร—8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine the flour and 1/4 cup granulated sugar. Pour in the melted butter and mix until a crumbly dough forms. Press this mixture evenly into the bottom of the prepared pan to create the crust. Bake for 10-12 minutes, until lightly golden.
  3. While the crust bakes, prepare the cheesecake filling. In a separate bowl, beat the softened cream cheese and 1/2 cup granulated sugar until smooth. Add the egg and 1 teaspoon vanilla extract, mixing until just combined.
