These Pecan Pie Truffles capture the rich flavors of pecan pie in a bite-sized chocolate treat. They are perfect for holidays and special occasions.
Ingredients
- 1 cup finely crushed graham crackers (about 10 crackers)
- 1/2 cup finely chopped pecans
- 1/4 cup melted butter
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon shortening
Instructions
- In a medium bowl, combine crushed graham crackers, chopped pecans, melted butter, powdered sugar, vanilla extract, and salt. Mix until well combined and a dough forms.
- Roll the mixture into 1-inch balls. Place the balls on a parchment-lined baking sheet.
- Melt semi-sweet chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip each truffle into the melted chocolate, ensuring it is fully coated.
- Place the coated truffles back on the parchment-lined baking sheet.
- Allow the chocolate to set completely at room temperature or in the refrigerator for about 15-20 minutes.
Notes
- For a smoother coating, add a little more shortening if needed.
- You can substitute pecans with walnuts if preferred.
- Store truffles in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
