Description

These Pecan Pie Truffles capture the rich flavors of pecan pie in a bite-sized chocolate treat. They are perfect for holidays and special occasions.

Ingredients

  • 1 cup finely crushed graham crackers (about 10 crackers)
  • 1/2 cup finely chopped pecans
  • 1/4 cup melted butter
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon shortening

Instructions

  1. In a medium bowl, combine crushed graham crackers, chopped pecans, melted butter, powdered sugar, vanilla extract, and salt. Mix until well combined and a dough forms.
  2. Roll the mixture into 1-inch balls. Place the balls on a parchment-lined baking sheet.
  3. Melt semi-sweet chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  4. Dip each truffle into the melted chocolate, ensuring it is fully coated.
  5. Place the coated truffles back on the parchment-lined baking sheet.
  6. Allow the chocolate to set completely at room temperature or in the refrigerator for about 15-20 minutes.

Notes

  • For a smoother coating, add a little more shortening if needed.
  • You can substitute pecans with walnuts if preferred.
  • Store truffles in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
