Ingredients
- 1 3/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1 cup brown sugar
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and the warm spices (cinnamon, ginger, nutmeg, and cloves). Set aside.
- In a large bowl, beat the eggs and brown sugar until well combined and slightly lightened in color, about 2-3 minutes.
- Add the pumpkin puree, vegetable oil, and vanilla extract to the egg mixture, and stir until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Scoop the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
