Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract


Instructions

  • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line it with paper liners.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and the warm spices (cinnamon, ginger, nutmeg, and cloves). Set aside.
  • In a large bowl, beat the eggs and brown sugar until well combined and slightly lightened in color, about 2-3 minutes.
  • Add the pumpkin puree, vegetable oil, and vanilla extract to the egg mixture, and stir until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  • Scoop the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
