Ingredients
- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1 cup milk
- 2 tablespoons melted butter, plus more for cooking
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar.
- In a separate bowl, whisk together the pumpkin puree, eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your favorite toppings.
Notes
- For extra flavor, add a pinch of nutmeg or ginger to the batter.
