Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the shortbread crust: Whisk together flour, butter, sugar, and salt. Press into a 9×13 inch baking pan.
  3. Bake crust for 15 minutes.
  4. Make the pumpkin filling: Whisk together pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, cinnamon, and ginger.
  5. Pour filling over the baked crust.
  6. Bake for 30-40 minutes, or until the filling is set.
