Description
A soft and spiced pumpkin cake with a cinnamon-sugar topping.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup pumpkin puree
- 1/2 cup buttermilk
- 2 tbsp granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F. Grease an 8×8-inch baking pan.
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a bowl.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla until combined.
- Mix in pumpkin puree.
- Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients.
- Pour batter into pan. Mix cinnamon and sugar for topping and sprinkle evenly over batter.
- Bake 30-35 minutes or until a toothpick comes out clean.
- Cool before slicing.
Notes
- Use room-temperature ingredients for even mixing.
- Do not overmix the batter to keep the cake tender.
- Store leftovers in an airtight container for up to 3 days.
