Description

A soft and spiced pumpkin cake with a cinnamon-sugar topping.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup pumpkin puree
  • 1/2 cup buttermilk
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)


Instructions

  1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.
  2. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a bowl.
  3. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla until combined.
  5. Mix in pumpkin puree.
  6. Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients.
  7. Pour batter into pan. Mix cinnamon and sugar for topping and sprinkle evenly over batter.
  8. Bake 30-35 minutes or until a toothpick comes out clean.
  9. Cool before slicing.

Notes

  • Use room-temperature ingredients for even mixing.
  • Do not overmix the batter to keep the cake tender.
