Ingredients
- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon melted butter
- 1/2 cup milk
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar.
- In a separate bowl, whisk together the pumpkin puree, eggs, melted butter, and milk until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Lightly grease your waffle iron.
- Pour about 1/2 cup of batter onto the hot waffle iron.
- Cook according to the waffle iron manufacturer’s instructions, usually 3-5 minutes, until golden brown and cooked through.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings.
