Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups pecan halves
- 1 cup packed light brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
- In a medium bowl, combine the pecan halves, brown sugar, corn syrup, and 1 teaspoon of vanilla extract. Mix well.
- Spread the pecan mixture evenly over the crust.
- Crumble the remaining dough over the top of the pecan filling.
- Bake for 35-40 minutes, or until the crust is golden brown and the filling is set.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- For a richer flavor, you can toast the pecans lightly before adding them to the filling.
- Ensure the bars are completely cool before cutting to prevent them from falling apart.
- Store leftover bars in an airtight container at room temperature for up to 3 days.
