Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups pecan halves
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking pan to form the crust.
  6. In a medium bowl, combine the pecan halves, brown sugar, corn syrup, and 1 teaspoon of vanilla extract. Mix well.
  7. Spread the pecan mixture evenly over the crust.
  8. Crumble the remaining dough over the top of the pecan filling.
  9. Bake for 35-40 minutes, or until the crust is golden brown and the filling is set.
  10. Let the bars cool completely in the pan before cutting into squares.
