Description
A light and fresh cucumber Caprese salad that combines crisp cucumbers with juicy tomatoes, fresh mozzarella, and basil.
Ingredients
- 2 large cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and slice cucumbers and halve cherry tomatoes.
- Cut fresh mozzarella into bite-sized cubes.
- Chop fresh basil leaves.
- In a large bowl, combine cucumbers, tomatoes, mozzarella, and basil.
- Drizzle with olive oil and balsamic vinegar.
- Sprinkle with salt and pepper.
- Toss gently to mix.
- Serve immediately or chill for 30 minutes before serving.

- Use fresh, ripe tomatoes for best flavor.
