Ingredients

  • 2 large cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, cubed
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Wash and slice cucumbers and halve cherry tomatoes.
  2. Cut fresh mozzarella into bite-sized cubes.
  3. Chop fresh basil leaves.
  4. In a large bowl, combine cucumbers, tomatoes, mozzarella, and basil.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Sprinkle with salt and pepper.
