A simple and delicious fall side dish featuring roasted acorn squash with brown sugar and butter.
Ingredients
- 2 acorn squash
- ¼ cup butter
- ¼ cup brown sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 400°F.
- Cut the acorn squash in half and scoop out the seeds.
- Place the squash halves on a baking sheet, cut side up.
- Divide the butter, brown sugar, and cinnamon evenly among the squash halves.
- Roast for 45-50 minutes until tender.
- Serve warm.

- For a crispier texture, broil for the last 2-3 minutes.
