Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed butternut squash with olive oil, salt, and pepper.
- Spread the squash in a single layer on a baking sheet.
- Roast for 20-30 minutes, or until tender and lightly caramelized, turning halfway through.
- If using herbs, add them during the last 10 minutes of roasting.
