A delicious and healthy salad featuring roasted sweet potatoes and apples.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 2 apples, cored and sliced
- 1/4 cup olive oil
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 5 ounces mixed greens
- 1/4 cup walnuts, chopped
- 2 tablespoons feta cheese, crumbled
- 2 tablespoons balsamic vinaigrette
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes and apples with olive oil, cinnamon, salt, and pepper.
- Roast for 20-25 minutes, or until tender.
- Let cool slightly.
- Combine mixed greens, roasted vegetables, walnuts, and feta.
- Drizzle with balsamic vinaigrette and serve.
