Roasted Tomato Spaghetti Sauce is rich, bold & homemade. This oven-roasted favorite brings deep flavor and cozy Italian vibes to every pasta dish!
Ingredients
- Roma tomatoes
- Cherry tomatoes
- Garlic
- Olive oil
- Basil
- Oregano
- Salt and pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.
- Wash and slice the Roma and cherry tomatoes in half. Arrange them cut-side up on the prepared baking sheet. Drizzle with olive oil, season with salt and pepper, and toss gently to coat.
- Roast the tomatoes for 30-35 minutes, or until they are softened and slightly charred on the edges. Keep a close eye to prevent burning.
- While the tomatoes are roasting, mince the garlic and chop the fresh basil and oregano.
- In a large saucepan or Dutch oven, heat a few tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
- Carefully transfer the roasted tomatoes to the saucepan, along with any juices that have accumulated on the baking sheet. Use a wooden spoon to gently break down the tomatoes, creating a chunky sauce.
- Stir in the chopped basil and oregano, and season with additional salt and pepper to taste.
- Simmer the sauce for 15-20 minutes, stirring occasionally, to allow the flavors to meld and the sauce to thicken slightly.
- Taste and adjust seasoning as needed. The sauce should be rich, sweet, and perfectly balanced.
