- Prepare the marinade: In a large bowl, combine olive oil, minced garlic, dried oregano, paprika, lemon zest, salt, and pepper. Whisk the ingredients together until well combined.
- Marinate the chicken: Add the chicken thighs to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to infuse the meat.
