Ingredients

  • Sausage (Italian, chicken, or plant-based)
  • Vegetables (broccoli, bell peppers, onions, Brussels sprouts, sweet potatoes, zucchini)
  • Olive oil
  • Garlic
  • Paprika
  • Italian seasoning
  • Salt and pepper


Instructions

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or a silicone baking mat.
  • Chop the vegetables into bite-sized pieces, ensuring they’re all similar in size for even cooking.
  • Slice the sausage into 1-inch pieces, or leave them whole if you prefer larger bites.
  • In a large bowl, toss the chopped vegetables and sausage pieces with olive oil, garlic, paprika, Italian seasoning, salt, and pepper until everything is well coated.
  • Spread the mixture out evenly on the prepared baking sheet, making sure the ingredients have enough space to roast properly.
  • Roast the sheet pan for 20-25 minutes, flipping the ingredients halfway through, until the sausage is cooked through and the vegetables are tender and lightly caramelized.
  • For an extra crispy finish, broil the sheet pan for 2-3 minutes at the end, keeping a close eye to prevent burning.
