Ingredients

  • 1 whole turkey breast (about 3-4 lbs)
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 lb sweet potatoes, peeled and cubed
  • 1 lb red potatoes, cubed
  • 1 large onion, cut into wedges
  • 4 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts, sweet potatoes, red potatoes, and onion with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Arrange the vegetables in a single layer on a large baking sheet.
  4. Place the turkey breast on top of the vegetables. Season the turkey with salt and pepper.
  5. Roast for 50-60 minutes, or until the turkey is cooked through (internal temperature reaches 165°F or 74°C) and the vegetables are tender and slightly caramelized.
  6. Let the turkey rest for 10 minutes before carving.
  7. Serve the turkey with the roasted vegetables.
