Description

Make a big batch of shredded chicken for versatile freezer meals. This base recipe offers four different meal options.


Ingredients

  • 2-3 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Place chicken breasts in a slow cooker.
  2. Add chicken broth, olive oil, salt, and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  4. Shred the chicken using two forks.
  5. Divide the shredded chicken into four portions.
  6. Use each portion for a different freezer meal (see meal suggestions below).
