Description
Make a big batch of shredded chicken for versatile freezer meals. This base recipe offers four different meal options.
Ingredients
- 2-3 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place chicken breasts in a slow cooker.
- Add chicken broth, olive oil, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Shred the chicken using two forks.
- Divide the shredded chicken into four portions.
- Use each portion for a different freezer meal (see meal suggestions below).
Notes
- Freeze the chicken in individual portions for easy meal prep.
