Description
A hearty and flavorful beef stew perfect for holiday gatherings, made easily in a slow cooker.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 lb potatoes, peeled and cubed
- 4 large carrots, peeled and sliced
- 1 large onion, chopped
- 4 cups beef broth
- 1/4 cup all-purpose flour
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Toss beef with flour, salt, and pepper.
- Place beef, potatoes, carrots, and onion in the slow cooker.
- In a bowl, whisk together beef broth and Worcestershire sauce. Pour over ingredients in the slow cooker.
- Stir in thyme.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender.
- Adjust seasoning before serving.
Notes
- For a thicker stew, you can create a slurry with 2 tablespoons of cornstarch and 1/4 cup of cold water and stir it in during the last 30 minutes of cooking.
- Add other vegetables like peas or celery during the last hour of cooking.
