Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 lb potatoes, peeled and cubed
  • 4 large carrots, peeled and sliced
  • 1 large onion, chopped
  • 4 cups beef broth
  • 1/4 cup all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Toss beef with flour, salt, and pepper.
  2. Place beef, potatoes, carrots, and onion in the slow cooker.
  3. In a bowl, whisk together beef broth and Worcestershire sauce. Pour over ingredients in the slow cooker.
  4. Stir in thyme.
  5. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender.
  6. Adjust seasoning before serving.

Notes

  • For a thicker stew, you can create a slurry with 2 tablespoons of cornstarch and 1/4 cup of cold water and stir it in during the last 30 minutes of cooking.
  • Add other vegetables like peas or celery during the last hour of cooking.
