A comforting slow cooker chicken pot pie stew, perfect for a cozy meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup frozen peas and carrots
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 (10 ounce) can refrigerated biscuit dough, cut into pieces


Instructions

  1. Place chicken breasts in slow cooker.
  2. Add onion, carrots, celery, and chicken broth.
  3. Season with thyme, rosemary, salt, and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  5. Remove chicken and shred.
  6. Return chicken to slow cooker.
  7. Stir in frozen peas and carrots.
  8. Add biscuit pieces during the last 30 minutes of cooking.
  9. Cook until biscuits are cooked through.

Notes

  • You can substitute the chicken breasts with chicken thighs.
