Description
A hearty and easy-to-make slow cooker chicken stew with tender chicken, vegetables, and rich flavors.
Ingredients
- 2 lbs boneless, skinless chicken thighs, cut into chunks
- 1 large onion, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 potatoes, diced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium heat. Brown the chicken pieces for 3-4 minutes, then transfer to the slow cooker.
- Add onion, carrots, celery, and garlic to the slow cooker.
- Pour in chicken broth and diced tomatoes.
- Add potatoes, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove the bay leaf and serve hot.
Notes
- For extra flavor, add a splash of white wine before cooking.
- If the stew is too thin, thicken it with a cornstarch slurry.
- Leftovers can be stored in the fridge for up to 3 days.
