Description
A hearty and healthy slow cooker soup with chicken and vegetables, perfect for a comforting meal.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add chicken broth, onion, carrots, celery, garlic, diced tomatoes, thyme, and oregano.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Remove chicken from the slow cooker and shred with two forks.
- Return the shredded chicken to the slow cooker.
- Stir in frozen peas.
- Cook for an additional 15 minutes, or until peas are heated through.
- Serve hot.
Notes
- You can add other vegetables like zucchini or green beans.
- For extra flavor, add a bay leaf while cooking. Remove before serving.
- If you prefer a thicker soup, you can mash some of the vegetables.
