Ingredients
1 lb ground beef
2 cans (15 oz each) pinto beans, rinsed and drained
1 can (15 oz) corn kernels, drained
1 onion, diced
3 cloves garlic, minced
2 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 can (15 oz) tomato sauce
1 cup beef broth
2 tbsp Worcestershire sauce
1-2 tsp hot sauce (optional)
Instructions
Start by browning the ground beef in a large skillet over medium-high heat. Use a wooden spoon to break up the meat as it cooks, and continue until it’s no longer pink, about 5-7 minutes. Drain any excess fat from the pan.
Transfer the browned ground beef to your slow cooker. Add the drained and rinsed beans, frozen corn, diced onion, minced garlic, chili powder, cumin, garlic powder, and onion powder. Stir to combine all the ingredients.
In a separate bowl, whisk together the tomato sauce, beef broth, Worcestershire sauce, and hot sauce (if using). Pour this sauce mixture over the ingredients in the slow cooker and stir to ensure everything is evenly coated.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the flavors have melded and the casserole is hot and bubbly.
Once the cooking time is up, give the Cowboy Casserole a final stir. Taste and adjust any seasonings as needed, adding more salt, pepper, or hot sauce to suit your preferences.
Serve the Slow Cooker Cowboy Casserole hot, garnished with your favorite toppings like shredded cheddar cheese, diced avocado, chopped fresh cilantro, or a dollop of sour cream.
