Ingredients
- 6 cups peeled and cubed potatoes
- 1 medium onion, chopped
- 4 cups chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup shredded cheddar cheese (optional)
- Chopped chives for garnish (optional)
Instructions
- Place potatoes, onion, broth, salt, and pepper in the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
- Stir in heavy cream.
- If desired, stir in cheddar cheese until melted.
- Garnish with chives.
