Description
Easy slow cooker shredded chicken with Mexican spices. Perfect for tacos, salads, or bowls.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet.
- Sear chicken breasts on both sides.
- Place onion and garlic in the slow cooker.
- Add chicken breasts.
- Mix taco seasoning, chili powder, cumin, and smoked paprika.
- Sprinkle spices over chicken.
- Pour in chicken broth.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Shred chicken with two forks.
- Season with salt and pepper.
- Serve as desired.
Notes
- For extra flavor, add a can of diced tomatoes.
- You can use chicken thighs instead of breasts.
