Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup corn kernels
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/4 cup crumbled cotija cheese
- 1 lime, juiced
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, mix corn, mayonnaise, sour cream, chili powder, garlic powder, and cumin.
- Spread the mixture over the chicken.
- Cook on low for 6 hours or high for 3 hours.
- Shred the chicken and mix with the sauce.
- Top with cotija cheese, lime juice, and cilantro before serving.
