These soft molasses cookies are perfectly spiced for a classic holiday treat. They are chewy and flavorful, making them a favorite for Christmas.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 3/4 cup unsalted butter, softened
- 3/4 cup packed brown sugar
- 1/2 cup unsulfured molasses
- 1 large egg
- 1 teaspoon vanilla extract
- Granulated sugar, for rolling
Instructions
- In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the molasses, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Chill the dough for at least 1 hour. This makes it easier to handle.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the chilled dough into 1-inch balls. Roll each ball in granulated sugar.
- Place the cookie balls about 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Chill the dough for at least 1 hour before baking.
- Roll the cookie balls generously in granulated sugar for a sweet, crunchy exterior.
- Do not overbake; the cookies should be soft and chewy in the center.
