Ingredients
- 1 (15 ounce) can sweet potatoes, mashed
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup evaporated milk
- 1 (9 inch) unbaked pie crust
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, beat mashed sweet potatoes, sugar, and butter until smooth.
- Beat in eggs one at a time.
- Stir in cinnamon, nutmeg, ginger, and salt.
- Gradually beat in evaporated milk.
- Pour filling into the unbaked pie crust.
- Bake for 50-60 minutes, or until a knife inserted near the center comes out clean.
- Let cool completely before serving.
