Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and finely diced apples (about 2 medium apples)
- 1/2 cup chopped walnuts or pecans (optional)
- For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk or apple juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.
- In a large bowl, whisk together the flour, granulated sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced apples and nuts (if using).
- Pour the batter into the prepared Bundt pan, spreading it evenly.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk (or apple juice), and vanilla extract until smooth. Add more liquid if needed to reach desired drizzling consistency.
- Once the cake is completely cool, drizzle the glaze over the top.

- Use firm apples like Honeycrisp, Fuji, or Gala for best results.
- Ensure your apples are finely diced so they cook through evenly.
- You can add a tablespoon of lemon juice to the apples to prevent browning if preparing them ahead of time.
